FREEBIE TASTER RECIPE- Spinach Squares

Spinach Squares


You need:

1 cloves garlic minced

1/4 C of Onion diced small

1/4 tsp balsamic vinegar (I have it in a sprayer and use 3 sprays)

1/4 tsp Fresh ground nutmeg ( I am sure the one already ground is fine)

1package frozen chopped spinach thawed and squeezed dry (de-watered)

1/2 C  Mozzarella

2-3 TBSP  Mexican Blend Cheese

1 Pkg Phyllo dough

Butter spray - or melted butter depends if you want low cal

Salt and pepper (1/4 tsp combined)



In sauté pan on Med heat combine

Garlic

Onion

Sauté in a non stick skillet in olive oil (or use some cooking spray) until translucent (about 5 min)

Add balsamic vinegar, salt and pepper



Remove from heat and put in bowl. Mix in drained spinach and nutmeg. let cool

Add cheese and let sit while you prepare the dough.



You can make these in any shape that you wish. I did triangles. Or in a brownie pan.

Once your phyllo dough is thawed (not in microwave) follow package instructions.

Preheat oven to 400-425 depending on your oven temp (again see directions for whatever recipe is on the cover of the box)


For squares:

Spray your roaster or pan or whatever you use with the butter spray then put cover the bottom

with phyllo dough 1 sheet first then spray with butter (or baste with melted butter) lay another sheet and spray with butter until

You have 3-5 layers on the bottom then add spinach mixture. Then repeat 1 sheet phyllo spray with butter spray (or baste with melted butter)

Phyllo etc. till you have 3-5 layers on top. Spray top layer and place in oven for 15-20 min or until top becomes golden.



For the Spanikopita

Double the spinach, garlic, onion, and swap the cheese for feta cheese. I use about 4 of the double dice size squares..and crumble really small
